										unveils a limited edition Sherry 
										Collection, a trio of whiskies each 
										finished in a different type of sherry 
										cask, they are Tomatin The Manzanilla 
										Edition 2014, The Palo Cortado Edition

										Highland distiller Tomatin has unveiled 
										The Sherry Collection, a trio of new 
										sherry cask finished single malts. 
										 
										This limited edition series is said to showcase 
										the unique influence of different sherry 
										casks, featuring classic Tomatin whisky 
										matured in Manzanilla, Palo Cortado, and 
										Pedro Ximénez butts. 
										 
										Fortified wine has been integral to 
										Tomatin whisky's history, with the 
										distillery sourcing sherry casks from 
										Jerez for maturation for over a century. 
										The Sherry Collection celebrates modern 
										sherry culture, which has seen a 
										resurgence due in part to the growing 
										tapas scene and evolving consumer 
										preferences. 
										 
										Tomatin’s creative team has refined 
										three expressions, each bottled at 
										different ages to showcase the whiskies 
										at their peak. 
										 
										Tomatin The Manzanilla Edition (RRP £65, 
										46% ABV, non-chill filtered, natural 
										colour) distilled in 2014 and aged for 
										10 years including a finish in Manzanilla butts for two 
										years. It is said to offer aromas of sourdough 
										bread and salty popcorn, balanced with 
										dried fruits, chamomile tea, grapefruit, 
										maple syrup, and salted walnut. The 
										finish is slightly salty with warm brown 
										butter. 
										 
										Tomatin The Palo Cortado Edition (RRP 
										£95, 46% ABV, non-chill filtered, 
										natural colour) this 15 year old was distilled in 2008 
										and finished in Palo Cortado butts for 
										three years. It is said to present aromas of 
										cinder toffee and dried orange, followed 
										by milk chocolate, toasted fruit loaf, 
										and Brazil nuts on the palate. The 
										finish is tangy and complex, with hints 
										of black tea and ginger. 
										 
										Tomatin The Pedro Ximénez Edition (RRP 
										£150, 46% ABV, non-chill filtered, 
										natural colour) distilled in 2006, this has the longest 
										maturation of 17 years, including an 
										eight-year finish in PX casks. It 
										is said to feature a nose of sticky toffee pudding 
										and espresso, followed by lemon curd, 
										golden syrup, dates, dried fig, and muscovado sugar on the palate. The 
										finish is long with notes of rum, 
										raisin, and dark chocolate. 
										 
										Each edition comes in the classic 
										Tomatin 70cl bottle with distinctive 
										packaging that combines the rich and 
										rustic tones of the Scottish Highland 
										landscape with the vivid colours of 
										classic sherry. The secondary carton 
										features wood grain markings to 
										highlight the different cask finishes 
										used.
