Tomatin
releases 2011 Pedro Ximénez sherry
matured single cask exclusively for UK
specialist retailers.

Highland distillery Tomatin has unveiled
a limited-edition 2011 single cask
Scotch whisky, matured in a first-fill
Pedro Ximénez (PX) sherry butt and
bottled exclusively for specialist
whisky retailers across the UK.
The Tomatin 2011 single cask, Cask No.
37316, is a 15 Year Old Highland single
malt that showcases the distillery’s
long-standing relationship with sherry
cask maturation. Sherry has been an
important part of Tomatin’s
whisky-making history for more than a
century, with the distillery having
sourced casks from Jerez throughout its
history.
Selected by Tomatin's whisky-making
team, the first-fill Pedro Ximénez
sherry butt has given the distillery’s
characteristically soft and fruit-led
spirit additional depth and richness
during its lengthy maturation. The
result is a single cask whisky combining
Tomatin’s Highland character with layers
of dark chocolate, dried fruit and
warming spice.
The Tomatin 2011 PX single cask opens
with candied orange peel, berry compote,
honey and vanilla on the nose. On the
palate, the fruit-forward spirit
develops into richer flavours of dark
chocolate, sultanas and tarte tatin,
followed by a long finish characterised
by baking spices.
The release also highlights Tomatin's
focus on cask quality and wood
management. The distillery operates a
first-class wood policy, sourcing
high-quality casks from around the
world, including the United States and
Jerez, to support the character and
consistency of its whiskies.
Tomatin is also one of only four
distilleries in Scotland with its own
in-house cooperage. The facility plays
an important role in the distillery’s
approach to cask management, with
Tomatin cooper Allan Bartlett recognised
for his expertise at the Icons of Whisky
Awards 2025, where he was named ‘Cooper
of the Year’.
Jamie Muir, distillery manager at
Tomatin, said: "Sherry casks are woven
into the Tomatin story, and the flavours
created in this whisky show exactly why
we return to them time and time again. A
first-fill Pedro Ximénez sherry butt is
a bold cask to work with, and the
lengthy maturation has drawn out real
richness and depth in our spirit without
masking the soft, fruit-led Highland
character Tomatin is known for.
"Our first-class wood policy means every
cask is looked after with genuine care,
and having our own cooperage on site led
by Allan is a big part of that."
The release has been created
specifically for the UK’s specialist
whisky retail sector, giving enthusiasts
an opportunity to purchase a Tomatin
single cask that will not form part of
the distillery’s wider core range.
Gordon Hynd, UK sales director at
Tomatin, said: "Specialist whisky
retailers are where enthusiasts go to
find something they won’t see anywhere
else, and we wanted to give them a
release that lives up to that. This
single cask whisky has been created with
their customers in mind, offering a
limited Tomatin expression unlike
anything else in our range.
"Specialist wine and spirit retailers in
the UK carry real expertise and a
passion for choosing the right bottle
for every customer. At Tomatin, we have
built up trusted relationships with UK
merchants over decades and value them
enormously, so this 2011 single cask is
our way of offering them something
special."
Bottled at a cask strength of 58.8% ABV,
the Tomatin 2011 single cask is limited
to just 608 bottles. The 70cl release is
presented in dark green packaging
featuring subtle detailing inspired by
the rolling Highland landscape
surrounding Tomatin Distillery.
Priced at an RRP of £105, the Tomatin
2011 Pedro Ximénez single cask will be
available to consumers from 29 September
2026 through specialist online whisky
shops such as
The Whisky Exchange
and
Master of Malt
