Kilchoman
have released their first limited edition 100% PX sherry cask matured whisky, the
Kilchoman PX Sherry Cask Matured 2023
Edition and to cut a long story short it
is absolutely outstanding.
 Kilchoman
has released their first limited edition
whisky
to have been 100% fully matured
in PX
(Pedro Ximénez) sherry casks.
This Kilchoman PX Sherry Cask Matured
2023 Edition follows the release of the outstanding PX Sherry Cask 2021 Edition so it has a
lot to live up to. The 2021 Edition
differed in that it was a vatting full
PX cask matured whisky and PX cask
finished whisky.
The new Kilchoman PX Sherry Cask Matured
2023 Edition
is a heavily peated dram with a phenol
level 50 PPM, it has been fully matured for a minimum of
five years in a combination of 61 Pedro
Ximénez casks previously used by Bodega
José y Miguel Martin, these casks have
produced a limited release of 23,000
bottles which have been bottled at 50%
ABV and of course non chill filtered and
naturally coloured.
Commenting on the release Kilchoman
Founder Anthony Wills said: "The 2023 PX
Sherry Cask Matured release is our first
limited edition to be fully matured in
PX casks. Some might consider five years
to be short maturation, but these PX
hogsheads give such a rich and sweet
character, shorter maturation is the
only option to maintain a good balance
of flavour. Here, the citrus sweetness
and peat smoke of our spirit balance
beautifully with the PX character to
create a multi-dimensional whisky, rich
and sweet with hints of light citrus
sweetness and waves of maritime peat
smoke,"

Bottled at 50% ABV.
Producer's
Tasting Notes:
Nose: An
enticing infusion of barley sugar
sweetened sherried raisin and sultanas
and charismatic gentle earthy peat
smoke, a hint of liquorice and all with
a bit of a lemon citrus edge and distant
peppery spice.
Taste: Delicious
mix of barley sugared and earthy peat
smoke infused with equally delicious
sherried fruit in the form of raisin,
sultana and a touch of orange and lemon
citrus. Some lovely peppery oak spices
things up a little and some late
liquorice.
Finish: An
equally delicious, long finish with a lingering
balance sugar boosted sweet peat, oak
spices and sherry, which slowly bow out
to leave a
late touch of pear, some dark chocolate
and slightly drying oak.
Comment:
It was a bit of a wait since the first
PX release in 2021, but boy was it worth
the wait, this is simply a delicious
balance of Kilchoman's charismatic peat,
quality sherry casks and oak spices are
all sugar charged and enhanced by the
delicious barley sugars and oak. An
absolutely outstanding young peated,
sherried dram which goes to prove that
some of the best peaty sherried drams
are best served young and Kilchoman have
got this one spot on. Highly recommended
if you enjoy a peaty sherried dram, you
would be hard pushed to find better.
