Kilchoman add
a PX Sherry Cask Matured single malt to
their whisky line-up.
Kilchoman
has launched their first general ongoing
PX (Pedro Ximénez) sherry cask matured
single malt release. Fans of the Islay
farm distillery amongst you may have had
the pleasure of some PX Cask matured
single cask releases in the past, but this will be
the first ongoing general release, available
worldwide.
The new whisky launches with the
Kilchoman PX Sherry Cask Matured 2021
Edition, and this first edition of the
PX Sherry Cask Matured is a vatting of
33 casks in total, 9 fully PX matured casks
and 24 finished in Pedro Ximénez sherry
casks for between 12 and 18 months.
These casks were combined to produce
12,000 bottles at a strength of 47.3%
ABV.
Commenting on the new PX Sherry Cask
Matured Anthony Wills, Kilchoman
Founder, said: "Pedro Ximénez casks
aren’t always the easiest to work with.
That was why we decided on a combination
of full maturation and finishing, to
balance the distinct PX influence with
that of our spirit. I’m delighted with
the result; big and bold but with a
delightful poise and balance of
flavour."

Edition is bottled at 47.3% ABV and has
a RRP of £74.94 and will be available from specialist
online whisky retailers such as

Morrison's Tasting Notes:
Nose:
Gentle slightly earthy peat interlaced
with a sherry aroma of sweet sultanas
and raisins, a hint of sweet liquorice
and a touch of coffee. A little lemon
citrus lurks in the background.
Taste:
Brown sugared earthy peat which is
balanced by the sherried fruit fills the
mouth. Burnt raisins in a garibaldi
biscuit, a touch of orange and lemon
citrus, just a touch of crushed almond,
some lovely oak spice, a little dark
chocolate all coated with a lovely earthy brown
sugared peat smoke with a red liquorice
edge.
Finish:
A lovely long finish with a balance of
earthy peat smoke, sherried fruit and
gentle spices which fade leaving some
lingering cigar box notes and mildly dry
oak.
Comment:
Simply a delicious balance of
Kilchoman's earthy peat and PX sherry,
the peat and sherry builds after a few
mouthfuls adding to the pleasure.
Another cracking peaty sherried dram
from the whisky makers at Kilchoman and
a welcome ongoing expression.
