Kilchoman
release first ever Port Cask Matured
whisky.
If
your taste is anything like mine you
will be pleased to hear that Kilchoman,
Islay’s newest distillery have released its
first ever port cask matured whisky.
Kilchoman’s Port Cask Matured release,
the first of its kind from the
distillery was 100% matured in ex Ruby
Port casks allowing for the full
influence of the port casks to be
imparted into the whisky.
Peat smoke and Port don't always sit
well together but if they do it can make
for a very enjoyable whisky. To date the
team at Kilchoman have got there cask
selections right so I am looking forward
with confidence they have done so again.
Hopefully the young Kilchoman
peat smoke sits well with the the port
cask influence.
Anthony Wills, managing director of
Kilchoman, said: "We experimented with a
number of different cask types to see
which ones worked for a full maturation
term and the ruby port casks are
exceptional at just 3 years old. The
palate has a wonderful balance of port
influence but maintains much of Kilchoman’s
signature characteristics."
The Kilchoman Port Cask Matured release
was distilled in 2011 and recently
bottled in 2014 and like all Kilchoman
single malts it is non chill-filtered
and is natural colour. Bottled at 55%
ABV this special edition release is
limited to 6000 bottles and will be available in the UK from
September from

Morrison's Tasting Notes:
Colour:
Rich ruby red.
Nose: A big delicious fruity
nose, plum, orange, lemon. Some creamy
toffee, dark chocolate and a hint of a
smouldering bonfire in the background.
Taste: Lovely young Kilchoman peat smoke leads the way
closely followed by deliciously sweet
rich fruit from the port cask, mild
damson jam, orange, burnt raisins. A
touch of chocolate nuttiness.
Finish: The deliciously rich fruit continues into the finish
along with the lovely sweet drying
Kilchoman peat smoke, some late vanilla.
Comment:
It starts as a big fruity experience on
the nose and this is joined by lovely
sweet drying smoke on the palate, a
lovely balance of peat & port, this is
young, this is fun and very very
enjoyable. A very smooth whisky even
with its youth and big 55% strength.
They really are good a at selecting
casks at Kilchoman. If you like Peat &
Port then this one is delicious.
