The creative
folks at Kilchoman have been busy again
this time up they are offering whisky
drinkers a limited release which has
fully matured ex-Maury fortified wine
casks.
 Kilchoman
has announced the release of Kilchoman
Maury Cask Matured, its first limited
edition release of 2026, showcasing a
full-term maturation in a cask type the
distillery has not previously used.
The Maury Cask Matured expression is not
a cask finish; instead, the whisky has
been aged entirely in ex-Maury fortified
wine casks for the duration of its
maturation. Maury is a sweet fortified
wine from the Roussillon region in
southern France, typically produced from
Grenache noir grapes.
Kilchoman tells me that the time this
whisky has spent maturing in ex-Maury
fortified wine casks has imparted rich
layers of dates, raisins and dark honey
sweetness, which complement Kilchoman’s
signature peat smoke and bright citrus
character.

commented on the release, saying: "The
Maury Cask Matured is a first ever
release for us and something rarely seen
on the market at all. These powerful
fortified wine casks can be challenging
to manage, but when you get them right,
they can produce something really
special. We are known for our full
maturation policy for many of our
limited editions and this is another
example of that, bringing through all
those beautiful Maury flavours in a bold
and balanced dram, not to mention the
incredible crimson red hue to the
whisky>"

Nose: Figs,
raisins, and dates with salted caramel,
orange peel, and soft peat smoke.
Taste: Pipe
smoke and dark chocolate with layers of

gentle dry spice.
