Review of
the Oloroso sherry butt matured Loch
Gorm 2021 Edition.
Kilchoman
Loch Gorm 2021 is the latest instalment of
the exclusively
sherry matured limited edition annual
release from the Kilchoman farm distillery
on the Isle of Islay.
The sherried Kilchoman dram takes its
name from Islay’s largest freshwater
loch which neighbours the farm
distillery, Loch Gorm is their only
annual limited edition matured entirely
in Oloroso sherry casks.
Year on year the vatting of Loch Gorm
subtly changes (and sometimes not so
subtly), in age, colour and character.
This latest Kilchoman Loch Gorm 2021
release is a combination of 24 Oloroso
sherry butts which were filled in 2011
and 2012. These large 500 litre sherry
butts were sourced from the
renowned Bodega Miguel Martin in Spain
and filled with Kilchoman spirit peated
to 50ppm.
The peaty Kilchoman spirit was matured
in the 24 Oloroso sherry butts for a
minimum of 9 years before being vatted
together and bottled non chill-filtered
and naturally coloured at 46% ABV and those
24 butts have produced 17,000 bottles
for the 2021 release of Loch Gorm.
Commenting on the Kilchoman Loch Gorm
2021 release Anthony Wills, Kilchoman
Founder and Master Distiller said:
"Although we have always filled the bulk
of our spirit into ex-bourbon barrels,
the Loch Gorm releases have shown how
well our peated Islay spirit can combine
with sherry casks, something that’s not
always an easy task.
"Rich bold flavours with a breadth,
depth and balance of character that sets
it apart, the 2021 edition is packed
with juicy fruit, macerated lemon and
sweet chargrilled BBQ smoke."

Kilchoman Loch Gorm 2021 Review
|
William
Morrison's Tasting Notes:
Nose:
Gentle earthy peat smoke infused with
lemon citrus and rounded by the slightly
gentler sherry fruit, some toffee and a
wee touch of spice.
Taste:
A delicious slightly salted earthy peat
and sweet raisin and sultana infusion
leads, closely followed by some gentle
orange and lemon citrus, a little vanilla toffee, just a touch of cinnamon
and some lovely sweet oak spice.
Finish:
A deliciously long finish with lingering
sweet oak spices and sherry infused
sugar cured gentle smoky bacon peat, a
late touch of pear and some dark
chocolate.
Comment:
As always a delicious balance of
Kilchoman's earthy peat and sherry, as
modest as they are the sweet oak and
sherry spices build after a few
mouthfuls adding to the pleasure. I just
love the fact that each Loch Gorm
release is subtly different from
previous Loch Gorm releases as billed
and 2021 is another fantastic balance of
Kilchoman peat and gentle Oloroso
sherry. If you enjoy sherry with your
peat then this is hard to beat, it is
another well put together creative mix
of Kilchoman's peated whisky matured in
quality sherry casks.
