Fèis Ìle 2021 bottling and Fèis Ìle
tasting packs now available for you to
join virtual tastings online.
Fèis
Ìle 2021 is almost here but sadly, as
with last year, the celebrations will be
online. With delayed deliveries being
all too normal these days, Kilchoman
have decided the sooner they can
dispatch their Fèis Ìle items to
customers around the world the better.
All items will be available to purchase
from the Kilchoman website at 2pm today
Wednesday April 21st ahead of their
official Fèis Ìle day live events on
June 3rd. A full schedule of Kilchoman
Fèis day plans will be announced soon.
Anthony Wills, Kilchoman Founder &
Managing Director, has selected eight
100% Islay casks for this year’s
release, two 2011 Oloroso sherry butts
and six 2012 bourbon barrels. The casks
were filled with 20ppm 100% Islay
spirit, distilled from Optic and
Publican barley varieties, harvested at
Kilchoman in 2010 and 2011. This Single
Farm Single Malt was matured in their
onsite dunnage warehouses before being
bottled at cask strength; 56.3% ABV.

marrying bourbon and sherry casks, I
feel these two cask types allow me to
increase complexity without losing depth
of character. The bourbon barrels I've
selected give a solid structure to the
dram that allow for a balance of
maritime Islay flavours and the natural
citrus sweetness of our spirit to shine
through. The two Oloroso sherry butts I
chose add depth and richness to the
whisky, I’ve had an eye on these casks
for a while and they’ve now reached
their peak"

Kilchoman are planning a packed
schedule of events for their Fèis day on
June 3rd, everything from fully
immersive 360 degree interviews with the
production team to behind the scenes
Q&As, Live Tastings and Food Pairings.
There will be three tasting packs
available to order so you can join in
with the live tastings from the comfort
of your own home - The Kilchoman DNA,
Through the Ages and Experimental Casks.
There is also COCO Chocolate and Great
Glen Chorizo Packs to pair with the
whiskies. More info regarding all
Kilchoman Fèis Ìle items is on their

Kilchoman Distillery is a small
family run farm distillery based on the
rugged west coast of Islay. The
distillery was established by Anthony
Wills in 2005, the idea was to build a
new distillery which took whisky
production back to its roots. Anthony
and wife Kathy have been joined by their
three sons; George, James and Peter.
Kilchoman produces its 100% Islay single
malt from barley which is grown in
fields surrounding the distillery and
completes every stage of the
whisky-making process at the distillery,
including traditional floor malting.
Kilchoman is the only distillery in
Scotland to do this.

packs will only be available from the
Kilchoman website but don't hang around
or you may miss out.

Morrison's Tasting Notes:
Nose:
A gentle, slightly earthy, peat smoke
with a equally gentle liquorice edge and
a little barley sugared sweetness is
interlaced with a some vanilla, a touch
of lemon and orange citrus, a little oak
spice and some sultana fruit hides in
the shadows.
Taste:
Delicious earthy peat piggy backed on
some bold sugars leads the charge
filling every corner the mouth, these
are joined by a zesty lemon citrus,
vanilla, butterscotch, oak spice and a
sultana fruitiness.
Finish:
Deliciously long, the sherry is more
prominent now and the the sugars and
peat just cling to the palate for an age
before fading to leave some lingering
oak spice and liquorice.
Comment:
Not too many sherry casks in the mix to
overwhelm the bourbon, both cask types
have their say here, I would say this is
as near as perfect balance of bourbon
and sherry cask Kilchoman as you could
hope for to maximise pleasure in the
mouth. As the Kilchoman fans amongst you
will already know, the farm distillery
does turn out some very good whiskies so
they do have to up their game to turn
out something extra-special for their
Islay Festival bottling and they have
certainly done this in my humble
opinion. I just loved this.
