The
GlenAllachie today unveiled their first
Masters of Wood expression, a 17 Year
Old Mizunara & Oloroso Cask Finish.

Independent Scotch whisky distillery,
The GlenAllachie has introduced the
first single malt in its new Master of
Wood series: a 17 Year Old Mizunara &
Oloroso Sherry Cask Finish.
Led by whisky maker Billy Walker, who
has over 52 years of experience, this
award-winning Speyside producer is
renowned for its expertise in sourcing
and managing exceptional and unique
casks from around the globe.
The new GlenAllachie 17 Year Old
release which has a UK RRSP of £260.99
combines whisky aged in rare Mizunara
oak barrels with spirit matured in rich
Oloroso Sherry puncheons and hogsheads.
Mizunara, a rare and expensive Japanese
oak, is seldom used in whisky due to the
challenges it poses in coopering and
maturation. Its tendency to twist as it
grows complicates stave production, and
its porous nature often leads to
leaking. Despite these difficulties,
Mizunara casks are prized for imparting
notes of sweet spices, sandalwood, and
charred oak, thanks to their low tannins
and high vanilla compounds.
Oloroso, a dry Sherry style from Spain’s
Andalusia region, is aged oxidatively
without a protective 'flor' yeast layer,
giving it a deep colour and rich, nutty,
dried fruit flavours.
This new 17 Year Old whisky is the
inaugural release in The GlenAllachie’s
ultra-premium Master of Wood series,
part of its Wood Collection that
showcases the distillery’s most
luxurious and experimental wood
finishes.
With a 50% ABV and no artificial
colouring or chill filtration, the
Mizunara & Oloroso Sherry Cask Finish
highlights The GlenAllachie’s expertise
in cask management and reinforces its
tagline, "Whisky in Good Hands."
Commenting on the high-end expression,
Walker shares: "As a chemist, I find
both cask management and blending truly
fascinating. This release combines the
finest and rarest of casks with
carefully considered blending. I feel
incredibly fortunate to have worked with
Mizunara, a very uncommon Japanese oak
that provides exceptional character but,
in turn, throws plenty of challenges our
way. Having said that, the result is
beyond worth the trials and
tribulations.
"The flavour delivery from the Mizunara
barrels, interwoven with the nutty,
spicy character of the Oloroso casks,
culminates in a spectacular single malt
with delectable notes of apple strudel,
runny honey, chocolate-covered hazelnuts
and stem ginger. This is indulgence at
its finest."
