The Dalmore introduces the inaugural offering in a four-year program showcasing its exceptional whisky collections. The Cask Curation Series Sherry Edition is the debut release in a series dedicated to celebrating The Dalmore's mastery in whisky craftsmanship and the crucial role played by exquisite casks in crafting the iconic Single Malt Scotch Whisky. The series will highlight distinguished collaborators and their partnerships with The Dalmore.

The first release in 2023, known as The Sherry Edition, showcases the renowned fifth-generation winemakers, González Byass, from Jerez de la Frontera, Spain. Each set in this collection comprises three exceptional aged-statement whiskies, a 26 Year Old, 28 Year Old and 43 Year Old, each of them meticulously finished in the finest González Byass casks, exclusively available to The Dalmore's whisky artisans.

Limited to a mere 150 sets available globally, The Sherry Collection comes impeccably presented in a bespoke leather-trimmed travel case, handcrafted in Florence, Italy, serving as an elegant backdrop for the trio of new expressions. Each age-statement whisky is encased in The Dalmore's iconic bottle, adorned with a matching collar:

  • The 26 Year Old, finished in the rare González Byass 2002 Vintage, Cask No.4
     
  • The 28 Year Old, completed in the highly rare González Byass 30 Year Old Matusalem Sherry Cask
     
  • The 43 Year Old, finished in the extremely rare González Byass 30 Year Old Apostoles Sherry Cask

Each expression in the collection represents The Dalmore Single Malt in its purest form, having been finished in González Byass Sherry Casks with natural colour, non-chill-filtered, and at cask strength.

This remarkable collection, a testament to 97 years of whisky craftsmanship, has been meticulously crafted at The Dalmore Distillery in Scotland by the Master Whisky Makers, Gregg Glass and Richard Paterson OBE. The Sherry Edition celebrates The Dalmore's century-old exclusive partnership with Jerez de la Frontera's finest winemakers, González Byass. Led by Master Winemaker Antonio Flores and his daughter Silvia Flores, this fifth-generation winery continues to shape the legacy of wine and whisky production.

The collaboration between the four master makers from Spain and Scotland, each at the pinnacle of their craft, upholds a time-honoured tradition of excellence between two noble houses in the world of wine and whisky. The Sherry Edition embodies the artistry of whisky-making born from this unique relationship between The Dalmore and González Byass, encapsulating their shared quest for the perfect composition.

The story of The Sherry Edition begins in the sun-soaked vineyards of Andalucia, a tale of the finest winemaking in a region shaped by the Mediterranean breeze and Atlantic winds. Sherry wine matures here, evolving in character as it flows from one cask to another. Each Sherry cask resides in a magnificent bodega, a spiritual place exuding peace, light, and space. During their visits to these hallowed winemaking spaces, The Dalmore's whisky makers carefully select casks with the perfect potential for aging whisky. These casks have already lived a lifetime under the watchful eye of González Byass winemakers before being chosen for their new role in maturing the finest Single Malt Scotch at The Dalmore. The Sherry Edition features three whiskies that have spent a combined 80 years maturing in González Byass wines.

The art of curating exquisite casks lies at the heart of The Dalmore's whisky-making legacy, making it a globally acclaimed distillery. The Dalmore was established to create a Single Malt unlike any other, pioneering multi-cask maturation in 1868. Today, under the guidance of Gregg Glass and Richard Paterson OBE, The Dalmore continues an unbroken tradition of visionary whisky makers, carefully selecting the rarest casks to craft truly exceptional whisky.

The Dalmore's distinctive stills yield a New Make spirit with a unique character and depth, noted for its robust and fruity qualities, which is said to be ideal for extended and intricate maturation. This enables The Dalmore's whisky makers to nurture the spirit over extended periods and seek out the finest and rarest casks from the world's premier vineyards and bodegas. Each of these exceptional casks possesses unique potential, influencing the personality of the Single Malt as it matures quietly over months, years, and decades.

This collection represents the first chapter in a four-year journey. In 2024, the second release in The Dalmore Cask Curation Series will explore the influence of Port pipes on the spirit, celebrating a partnership with a renowned Port wine maker. The third release arrives in 2025, followed by the fourth and final release concluding the series in 2026. Each release will commemorate The Dalmore's exclusive relationships with the world's finest wine and spirit makers.

The Dalmore 26 Year Old Vintage Sherry Finish Cask Curation Collection Sherry Edition 2023 has been bottled at Cask strength 48.2% ABV, naturally coloured and non-chill filtered.

The Dalmore 26 Year Old Vintage Sherry Finish was distilled in 1996 then matured in American white oak ex-Bourbon casks and finished in Cask #4 - a 2002 Vintage Sherry Cask.

Producer's Tasting Notes:

Nose: Orange blossom honey, apricot, Madagascan vanilla, and cacao.

Taste: Golden raisins, mandarin citrus, iced cherry cake, and sugared almonds.

Finish: Fresh baked brioche, light roasted coffee, crystallised ginger, and warm vanilla.

The Dalmore 28 Year Old Matusalem Finish was distilled in 1994 then matured in American white oak ex-Bourbon casks and finished in Cask #73 - a very rare 30 Year old Matusalem Sherry Cask.

Nose: Rich dark fruits, Manuka honey, liquorice, sweet tobacco, and star fruit.

Taste: Antique Sherry-soaked raisins, Old English marmalade, marzipan, and liquorice.

Finish: Waves of dark cherries, molasses, dark chocolate, and cassia bark.

Finish: Fresh baked brioche, grilled pineapple, and blood orange with a long sweet cinnamon finish.
