Richard Paterson tells us about the forthcoming release of The Dalmore 35.

Richard Paterson, The Dalmore Master Distiller who this month celebrates his 50th year in the whisky industry has unveiled his latest creation, The Dalmore 35 which he describes as truly special.

Richard had this to say about The Dalmore 35: "There are whiskies that you really cannot rush. You must take time to ensure that you get the best possible results, sometimes a whisky takes its time to uncover its true potential. It takes care and attention. I make it my business to get to know the casks at The Dalmore. They all have their own personality, a personality which I hone and nurture.

"Only after maturation in three different woods over a 35 year period, did I finally feel The Dalmore 35 had reached its full potential. And what a result we have.

"Derived from three wood profiles, including a distillery run Bourbon barrel, a Matusalem Sherry Butt and a Port Colheita Pipe, each cask gifts The Dalmore 35 with a truly captivating profile. A whisky which is the result so much work deserves its packaging to reflect this. For The Dalmore 35 we have worked in partnership with Baccarat, the exceptional crystal house, to create a bespoke decanter for this expression."

The Dalmore 35 is bottled in a bespoke crystal decanter, which has been skilfully created by the artisans of Baccarat, the prestigious French crystal house. The spectacular design has been blown by expert craftsmen, who must train for a minimum of 15 years before they are deemed to have fully mastered the challenging art of crystal making.

As we have come to expect from all Dalmore bottlings standing proud on the 35 decanter is The Dalmore’s iconic emblem, the ‘12-point Royal Stag’, which on this occasion has been created by leading Scottish silversmiths, Hamilton & Inches, holder of the Royal Warrant.

The price of the new Dalmore 35 which has been bottled at 40% ABV is £3500 and it will be released globally from October 2016 but if you can't wait that long then you will find a great selection of The Dalmore single malt whisky available from specialist whisky shops such as The Whisky Exchange
 

The Dalmore 35 Tasting Notes


Producer's Tasting Notes:

Colour: Satin wood amber gold with facets of freshly polished copper.

Nose: Crushed almonds, coffee mousse, soft liquorice and ginger bread.

Taste: Dark treacle cake, freshly ground Java coffee and banana bread.

Finish: Roasted chestnuts, raisins and intense orange peel.
