The Dalmore 17 Year Old, a deeper expression of Sherry Maturation and a new permanent addition to the Highland whisky makers core range.

The Dalmore 17 Year OldHighland Single Malt Whisky, The Dalmore, has unveiled a new permanent addition to its core portfolio: The Dalmore 17 Year Old. This release marks a deeper exploration of Sherry cask maturation, which they tell me delivers greater richness and complexity.

Known for their mastery of Sherry cask influence, The Dalmore Whisky Makers have crafted The Dalmore 17 Year Old to provide an even more layered and indulgent experience. The expression showcases decades of expertise in Sherry maturation, underpinned by The Dalmore’s long-standing partnership with González Byass. From this revered sherry producer, The Dalmore exclusively sources three exceptional Sherry casks, brought together in this Single Malt.

Naturally rich and decadent in character, The Dalmore 17 Year Old begins its maturation in American white oak ex-Bourbon barrels, forming a foundation of soft vanilla and honeyed sweetness. The whisky is then finished in a distinctive trio of Sherry casks — Amoroso, rare Apostoles, and Matusalem Oloroso — each exclusively selected from González Byass, one of the world’s most esteemed Sherry houses. Those familiar with The Dalmore 15 Year Old will recognise similarities in the cask profile, though the extended maturation of the 17 Year Old will no doubt have elevated the depth and intensity of flavour, although I haven't had the chance to taste the new 17 Year Old so I can only assume this.

As with all whisky maturation each cask contributes its own unique influence to the final spirit along its maturation journey. Apostoles lends structure, depth, and savoury complexity; Amoroso bridges sweet and savoury notes, bringing harmony and balance; while Matusalem Oloroso adds weight, roundness, and a lingering sweetness.

The Dalmore’s tradition of Sherry cask maturation spans centuries, with these casks renowned for enhancing and balancing the house style’s signature notes of chocolate, orange, and gentle spice. The three Sherry casks used for this expression are prized for both their age and scarcity, having spent decades maturing in Spanish bodegas, saturating the wood with deep, sweet, and intricately layered flavours that gradually enrich the whisky.

Combined with the extended ageing of this Single Malt, the result they tell me is a whisky of greater depth, decadence, and complexity, ready to be discovered and savoured.

The Dalmore tells me that on the nose you will find, aromas of Seville orange, rich orchard fruits, and warm wood spice emerge. The palate reveals poached pear, forest berries, sweet toffee, and orange marmalade, leading to a finish of dark chocolate orange, rich dried fruits, and lingering hints of cinnamon and nutmeg.

The presentation is as refined as the whisky itself. The Dalmore 17 Year Old is housed in a luxurious purple presentation box with a magnetic closure, offering a smooth and elegant unboxing experience. Inside sits The Dalmore’s signature silhouette bottle, finished with the iconic silver stag emblem.
