Historic
Castletown Mill based in Castletown,
Caithness, on Scotland’s north coast has
been revitalised as a new
whisky distillery - Stannergill
Distillery.

A new whisky
project from the team behind Dunnet Bay
Distillers — creators of the
award-winning Rock Rose Gin and Holy
Grass Vodka — marks the completion of a
major restoration effort. Their latest
venture, Stannergill Distillery, is a
small, independent distillery based in
Castletown, Caithness, on Scotland’s
north coast. The Mill, which once drew
the attention of King Charles, has been
meticulously transformed into its home.
The long-anticipated restoration of
Castletown Mill, one of the most
recognisable heritage sites on
Scotland’s northern coastline, is now
officially complete. Originally built
around 1818, the mill has been brought
back to life as a modern whisky-making
facility that blends historic
architecture with sustainable,
future-focused production. To celebrate
this milestone, Dunnet Bay Distillers
has launched a crowdfunding campaign
inviting whisky lovers and supporters of
Scottish heritage to play a role in the
next chapter of this landmark site.
For decades, the former grain mill stood
unused, prompting King Charles in 2007
to call attention to its deteriorating
condition. Now sympathetically restored,
the site houses Stannergill Distillery —
which focuses on crafting high-quality
single malt whisky using local barley
and environmentally conscious methods —
along with a restaurant and shop,
positioning it as an exciting new
destination in Caithness and on the
North Coast 500 route.
With the distillery now operational, the
crowdfunding initiative aims to involve
the local community, the Caithness
diaspora, and whisky enthusiasts in
supporting the next stage of
Stannergill’s growth. Funds will help
build a new maturation warehouse and
expand the team. In return, supporters
will gain access to exclusive
experiences and limited-edition
releases.
Crafted in the Northern Highlands,
Stannergill’s coastal single malt draws
inspiration from the elegance of classic
Speyside whisky while embracing the
bracing influence of the sea. They say
to expect bright orchard fruits,
vanilla, honeyed sweetness, soft spice,
and a subtle maritime salinity shaped by
North Sea air. Made with pure Highland
spring water and matured beside the
rugged northern shoreline, the spirit
reflects both the region’s untamed
character and its traditions.

Mill for more than 25 years and always
dreamed of bringing it back to life.
Back in 2008, I enquired about
purchasing it with a view to restoring
it to a whisky distillery. It wasn’t
possible at the time, but I didn’t let
go of the idea and, although it’s taken
nearly two decades, it’s great to see
this idea finally become reality. The
setting and building couldn’t be better
suited – it’s a perfect location for
whisky-making and for welcoming
visitors, with the main tourist road
passing running right past the front
gate."

showcase the very best of Caithness. The
crowdfunding campaign marks the start of
an exciting new phase, as we continue to
invest in local talent, expand
production, and build a ideal
destination for whisky tourism. We

Co-founder Claire added: "This project
represents more than whisky – it’s about
bringing people together and giving new
life to a place that means so much to
the community. From the very beginning,
we wanted Stannergill to reflect the
history and character of this place. The
Mill’s restoration shows what can be
achieved with shared vision and care for
heritage."
The redevelopment was led by Organic
Architects — specialists in Scottish
distillery design — in close
consultation with Historic Environment
Scotland and Highland Council to ensure
the Mill’s historic character was
carefully preserved. Local contractor
Norbloc Construction delivered the
project, supporting regional employment
throughout the restoration.
In addition to its restaurant and shop,
the distillery’s bar, guided tours, and
tasting experiences are scheduled to
open by Easter 2026, offering visitors a
fully immersive journey into whisky
making and the story of Castletown Mill.
