Bimber Distillery in London has unveiled a historic addition to its collection of English single malt whiskies with the release of its first-ever age statement expressions. The launch of ‘Harmony of Eight’ and ‘Bimber 8 Year Old Single Cask Edition’ signifies a pivotal moment for the distillery, celebrating eight years of dedication to traditional whisky-making and craftsmanship.

The Harmony of Eight will be available on December 5th via the Bimber website, priced at £130. Limited to 1,090 bottles, this expression is the result of a meticulous artisanal process. It incorporates single-farm barley, floor malting at Warminster Maltings, a 7-day open-topped fermentation, and distillation in directly fired copper pot stills. Matured in a combination of ex-bourbon and Pedro Ximénez sherry casks, this whisky is said to deliver a vibrant, fruit-forward profile that embodies eight years of careful maturation.

Accompanying this release is the Bimber 8 Year Old Single Cask Edition, limited to just 268 bottles. Crafted using the same traditional methods, this single cask release has been entirely matured in an American oak ex-bourbon cask. Hand-selected by the 2024 Bimber Klub Tasting Panel, it is said to offer  a profound expression of Bimber’s London single malt after eight years of aging. Priced at £160, it will be exclusively available to Bimber members starting today, December 4th.

These releases represent a significant milestone for Bimber Distillery, encapsulating years of meticulous effort, patience, and dedication to heritage whisky-making techniques. They celebrate the depth and complexity that eight years of maturation can bring while reflecting the distillery’s continued growth and evolution. Together, these age-statement whiskies celbrate Bimber’s journey in the craft whisky world, highlighting the artistry and care poured into every cask.

Aged 8 years, 1090 bottles available, bottled at 50% ABV.

Producer's Tasting Notes:

Nose: Fresh, ripe strawberries and raspberries sit alongside meringue, whilst mango and pineapple join gingerbread men and an assortment of gummy sweets.

Taste: Supple and immaculately integrated. Berry and tropical fruit salad is topped with drizzled melted chocolate, nougat pieces and chopped hazelnuts. Oak spice follows – gently piquant and adding uplifting cinnamon and a peppery bite.

Finish: Lingering fruit sweetness married perfectly with enduring oak and fading spices.
 

Bimber 8 Year Old Single Cask Review


Aged 8 years in a Ex-Bourbon Cask Ref. 11, only 268 available, bottled at 56.8% ABV.

Producer's Tasting Notes:

Nose: Rich and inviting with pineapple, dried apricots and aromas of resinous pine. Jamaican ginger cake, treacle sponge and a spice rack of nutmeg, clove and cinnamon join a light herbaceous note of eucalyptus.

Taste: Full-bodied and decadent with big chocolate, roasted cereals and caramel. Dark wood notes and brown sugars sit alongside cinnamon dusted doughnut balls, whilst bold notes of liquorice and join almonds, hazelnuts, crème caramel and vanilla pods.

Finish: An indulgent finish that lingers beautifully. French toast served with black tea, cinnamon crunch cereal and lingering apricot with a late minty note.
