I recently visited Covent Garden Market in London, Ontario and also picked up a Guiness infused cheese. I thought it would be interesting and fun to do my taste notes on the above.
Color: Marbled yellow and chocolate
Nose: The Guiness experience hugs the cheddar in a formal olfactory tuxedo. There is intensity and high cocoa content notes.
Taste: Full-bodied. The Guiness activates the intensity and depth of character of the cheddar. There is essence of Kalamata olives and balsamic vinegar.
Finish: Long, there is dark fruit sweetness in the wings. The cheddar seems a secondary player as the influence of the Guiness stout becomes figure to ground in the after-taste.
Comments: A superb alcohol-infused cheese.
Score: 94 _________________ "Always carry a large flagon of whisky in case of snakebite and furthermore always carry a small snake."

| Interesting, I have often come across the pairing of cheese and whisky at whisky tastings. Guinness cheese is a new one to me, I know Guinness can work well in gravy and sauces. |
