On Friday, I went over to The Whisky Shop, closest one to the office, expecting to pick up a bottle of Caol Ila 18 and they told me it was discontinued. The Whisky Exchange had them online and luckily also over at their Covent Garden shop, I picked up 2 instead of the 1 I was planning.

This got me searching for a list of discontinued bottles but I didn't turn up with anything. Is there any consolidated source for discontinued bottles?

I've tried to find the exact same thing that you're looking for and after speaking to several people on the subject, I found that there really is no single source which provides information/updates on discontinued whiskies (although I would love to be proved wrong).
However, I would recommend subscribing to as many distillery websites, whisky social media pages and forums such as this to be kept as up to date as possible.
As you say, whisky shop staff are also fairly aware of any bottles about to be discontinued so it's certainly worth popping by and asking from time to time.

I find that distilleries shout about new whiskies they release but often don't say a word when a whisky is discontinued, they just let it fade away from the shelves in whisky shops and one day you go to get it and you cant.

Having said that I do find it strange that you say Caol ila 18 is discontinued as I see it readily available in many whisky shops such as https://www.masterofmalt.com/whiskies/caol-ila-18-year-old-whisky/ and

https://www.thewhiskyexchange.com/p/1624/caol-ila-18-year-old

Availability of whiskies such as the Caol Ila 18 can vary from year to year, due to its age and popularity there is only a limited availability each year, I would be very surprised if it was discontinued.

One that has gone is "Glenmorangie Quarter Century" 25yo (came in a huge gold box).

There will be a serious of limited-edition "Vintages" though.

Glenfiddich Rich oak is being discontinued. I have heard rumours about Lagavulin 16yo too. Some Tesco's were discounting it last week so I thought it may be true but nothing concrete.

according to colin dunn as of now the Caol Ila 18 is not discontinued.
