I recently found out about this new first edition from Quebec:

It looks quite interesting. I called the SAQ (equivalent to LCBO in Ontario) long-distance to Montreal, Quebec and had 2 bottles put away that my brother in Montreal picked up the next day. I'm going down to Montreal in May so I'll bring back one of the bottles and try the other while I'm there visiting.
Here's some other specs on this one that they provide:
Distillation
Malted barley Quebec freshly ground and perfection in our distillery. Then it is mixed with source Covey Hill water and then heated for 2.5h in several stages. Maximum temperature is 67 ° C.
Temperature controlled in stainless tanks and jacketed cooling. Adding levure.Fermentation wort for 4 days.
Steam distillation in the various plateaus of Aroma type still controlled by computer. The product is diluted to 62% alcohol.
Breeding between 8 ° and 28 ° C with a humidity rate of 68 to 78%. Aging in new Hungarian oak.
