The piece it titled about rum, that's what the guy produces now, but it also covers uses in craft whisk(e)y. 20 years worth of maturation "taste" after 6 days? | Interesting, people have been saying for a long time it's possible to age the spirit faster, in order for this to happen the industry would have to completely re write itself, aged whisky in a week... I wonder if prices would drop.. I doubt it... Where would the snobbery come from lol... I like the idea my whisky has sat in a barrel for x amount of years... Tradition is everything in my mind, but the future might not include tradition.. |

| Whilst I prefer being safe in the knowledge that my whisky has sat for years and (to some extent) the price reflects the time it has sat in the barrel, like most things that cut time to people I can see this take off (for a while anyway). Think instant coffee and microwave meals. |

If one accepts the premise that a good whisky is only as good as the time and effort that went into making it, then all else is for naught. That doesn't mean some NAS drams are not stellar but there are limits; "rapidity" and quality do make strange bedfellows. _________________ "Always carry a large flagon of whisky in case of snakebite and furthermore always carry a small snake."
