I wonder what happened to the "over 200" distilleries, i am guessing prohibtion would have caused many to close as America was Canadian whiskys main market, then of course 2 world wars would have had an effect.

John, I believe all of these elements were factors in play. The Distillery District in Toronto which is now full of condo's and shopping was at the hub of early Canadian alcohol production. This video towards the end shows some photos of the early days of such production. Quite interesting.
