Here we have a real gem that I had the pleasure of having during my trip yesterday to the Feather's Pub in Toronto.

Neat-

Nose: Bons bons (sweets) wrapped in smoke, barnacles of sweet peat, cedar chest notes, sea air, sea breeze and seaweed; open-kiln baked thick crusty rolls and fresh-baked scones and the faintest hint of vanilla.

Palate: The familiar face of peat (just right), hint of iodine, bonfire smoke, spice, hint of black pepper, warming, Granny Smith apples, toffee, freshly cut wood from an old-fashioned saw, smokehouse and black olive juice notes.

Finish: Creamy, woody, hint of spearmint, antique oak, waning smoke and a lingering finish.

With 6 drops of Water- It Blooms!

Nose: Vanilla explosion, aromatic pipe tobacco, gentle smoke entwined with nectar, baked yams, sea air and fresh lint.

Palate: Peat (refined), iodine, dark chocolate (high % cocoa), chocolate pudding, spice, creamy, black licorice.

Finish:Lingering, smoke in the background, ash in the foreground, dark chocolate to mild bitter chocolate and rubbed out old leather, a dram like a symphony orchestra with all aromas and flavors in tune and balance.
