Following the strong reception of its first three releases, The GlenAllachie has today, April 21, introduced the fourth instalment in its acclaimed Sherry Series: the new GlenAllachie 11 Year Old Palo Cortado Sherry Cask Finished Single Malt Scotch Whisky.

Originally launched in April 2024, the Sherry Series examines how different secondary sherry cask finishes can shape whisky drawn from the same cask heritage. This newest release has been finished in one of the rarest and most distinctive styles of sherry — Palo Cortado — underlining the distillery’s dedication to exceptional wood policy and cask innovation.

The new 11 Year Old expression underwent a secondary maturation period in Palo Cortado sherry casks, resulting in a richly layered flavour profile featuring ripe plums, dark mocha and warming cinnamon spice, complemented by elegant dryness and impressive depth.

First emerging by chance in the mid-19th century and now prized by enthusiasts, Palo Cortado is considered the rarest and most mysterious style of sherry. It starts life as a young Fino, the driest and palest sherry style, before being fortified to 17.5–18% ABV. This process causes the protective flor yeast to fade and initiates oxidative ageing.

The result is a distinctive style that bridges Amontillado and Oloroso, marrying the aromatic elegance of the former with the structure, richness and body of the latter.

Master Distiller at The GlenAllachie, Billy Walker, commented: "With the Sherry Series, we set out to create expressions that spark curiosity and invite deeper conversation. The extended secondary maturation allows the spectacular nuances and variations of each sherry style to reveal themselves completely, taking centre stage in a way that's both bold and refined.

"In this bottling, we have combined The GlenAllachie's signature heather honey character with Palo Cortado's deeply complex, sweet and nutty aromas - creating a whisky with a remarkable spectrum of flavour that has surpassed our expectations."

Every cask in The Sherry Series begins its journey in the famed sherry-making region of Cádiz, where premium casks are sourced from the distillery’s long-standing bodega partners before travelling to Speyside. Each whisky is first matured in American oak ex-Bourbon barrels before receiving a secondary maturation in a single, carefully chosen sherry cask type, allowing the individual character of the wood to stand out.

Bottled at a robust 48% ABV, the latest release is presented naturally coloured and without chill filtration, preserving the whisky’s full flavour, texture and complexity.

With this newest expression, The GlenAllachie continues to explore the possibilities of cask maturation, giving whisky lovers a rare chance to discover the subtle influence of Palo Cortado sherry on Speyside single malt.

Colour: Polished Mahogany.

Nose: Cinnamon spice, butterscotch and damson plum, with notes of heather honey, raisin butter and crystallised ginger.
