I have recently acquired some moonshine bourbon mash spirit. I wanted to experiment with adding toasted wood to samples. Clearly I can use oak. Are there timbers that should be avoided?

Do you have a small barrel you will be using or are you actually planning on steeping some wood in the spirit? You may want to be careful if using virgin oak as it could be intense and too much for your new make spirit in a small scale set up, I would say use virgin oak in moderation. I have heard of chestnut wood being used but I would say stay away from pine wood unless you want it to taste like a cleaning detergent.

I'm using small pieces of wood to steep in sample bottles. I remember Ralfy using a few types and I know a distillery that uses apple and peach hard wood. In fact the bourbon spirit contains peach wood smoked barley. I'll steer clear of pine and be careful with the fresh oak..

I wondered about field maple, birch, hazel, ash with being native?

You could try seasoning a piece of oak in a wine or even smoky whisky of your preference.

I realize this is an old thread but wanted to add that a lot of the tourist Shine today uses pecan wood. It can turn out way too sweet for anyone who likes Shine. The pecan wood doesn't seem to impart any nutty flavor, just sugar.

For a nice nutty flavored Shine try hemp seed. And no, I'm not suggesting it imparts any CBD effects to the Shine.
