Description: Elijah Craig, was the Baptist minister widely considered the Father of Bourbon. He discovered the method of making true Kentucky Bourbon when he stored his spirit in barrels that had been charred in a fire, thus picking up extra colour and flavour. This eponymous Bourbon is at least twelve years old and has stunning depth and complexity of flavour for its price.
Tasting Notes: The nose is light and sweet, showing honey, caramel and cocoa aromas. These flavours follow on the palate, with a full, spicy finish that explodes and lasts.
Method of Production: Produced at the Heaven Hill distillery. This whiskey is a Small Batch Bourbon i.e. it is made from a vatting/dumping of a maximum of 100 barrels that are at least 12 years old, all drawn from the middle to upper floors of the traditional metal clad rickhouses. It was bottled without chill filtration at 47%.
