Tasting Notes: The nose has complex hints of fruit and heather honey moving onto a palate that is soft, with a subtle maltiness balanced with oak spice and fresh fruitiness.
Method of Production: Pure borehole water is mixed with ground malt from a mix of Chariot, Optic and Golden Promise barley, all at very low peating level. Fermentation in stainless steel washbacks precedes distillation in pot stills. One wash still feeds two spirit stills - these smaller spirit stills encourage maximum contact between contents and copper, helping remove impurities and concentrating the flavours thus giving a rich spirit. Macallan takes one of the finest cuts of any distillery in Scotland; only the best of the best, typically just 16%, goes forward to fill the casks. A minimum of 10 years ageing in mixture of European and American Oak casks, that have previously contained either Sherry or American Bourbon, preceded chill filtration and bottling.
