Description: Hidden away in a corner of Islay is this extremely individual distillery. Pronounced cull-eela much of this malt was used for blends such as Johnnie Walker and Bells. Now it is much more readily available as a single malt (though you would still not call it common) and this 18 year old is a great example of the more florally herbal flavours that comprise the house style. However, there is still just enough whiffs of smoke to satisfy the ardent Isaly lover.
Tasting Notes: A most distinctive malt, with notes of citrus and honey, as well as a deeper, richer overtone of treacle.
Method of Production: Caol Ila sources its water from a peaty loch just over a mile away from the distillery. Its stills are large by malt whisky standards, with a distinctive lantern shape which produces a unique and slightly oily new-fill spirit. The 18 year old enjoyed an extended period of barrel maturation after distillation.
