Description: Following the success of the limited edition PortWood 1989, David Stewart The Balvenie Malt Master selected a number of traditional whisky casks of The Balvenie distilled in 1991 that were considered perfect for further maturation in Port Pipes. And with the last release, this is a limited edition and not widely available.
Tasting Notes: The nose is perfumed with fruity and ripe raisin notes, plus hints of vanilla and oak with a nutty dryness. In the mouth it is creamy (almost silky) with rich flavours of dried fruits, honey and spice. The finish is long, gentle and nutty.
Method of Production: Not only is The Balvenie one of the few distilleries in Scotland to retain its floor maltings, it even farms its own barley locally. Its water is sourced from the Robbie Dubh spring (which also supplies Glenfiddich) and distillation takes place in unusually large copper pot stills, producing a full and rounded new make spirit. The PortWood first of all spent its life maturing conventionally in ex-Bourbon casks before David Stewart, The Balvenie Malt Master, selected those barrels for finishing, for a few extra months, in Port pipes.
