Description: Penderyn, the one, the only, Welsh whisky! Distinctive and slightly unusual but this is a very drinkable whisky in its own right. Made using a very special single pot still that belies the youthfulness of the whisky, and makes it taste much older.
Tasting Notes: The nose has sweet, herbal and vegetal notes, but also meaty yeastiness. The palate has rye-like mintiness with hints of ginger and sweet vegetal touches again. The finish is long, warming and soothing.
Method of Production: The 8% malted wash for this Welsh whisky was made at Cardiffs Brains Brewery. The special pot still is charged with 2500L of wash and steam heated. The alcohol travels as vapour through the two distillation columns, which contain copper plates, to the top of the second column where the vapour condenses and drops back down the column through a series of trays to the product tray (the seventh) where it is collected in a glass spirit safe. Owing to the efficiency of this still the cut is taken between 92% and 86% but it reduced down with water. The spirit is then put into combination of ex-Bourbon casks and old Madeira barrels for maturation. The whisky was bottled at 46% without chill filtration.
