Kilchoman, (pronounced kilhoman) was established in 2005,
it is a farm distillery and the first
new distillery to be built on Islay for 124 years. Kilchoman
gives everyone the opportunity to see
all that is best in the grass-roots
traditions of malt whisky distilling –
from barley to bottle.
It is one of the smallest distilleries
in Scotland with an annual production of
90,000 litres of alcohol. Kilchoman is one of only six distilleries to carry out traditional floor maltings, but the key difference at Kilchoman
is that the barley is grown on the farm
at the distillery, whereas other
distilleries purchase barley from around
the country. When mature Kilchoman
single malt will also be bottled on
Islay.
80% of their annual production is filled into a combination of fresh bourbon barrels from
the Buffalo Trace Distillery, Kentucky and refill casks and 20% into fresh oloroso
sherry butts which should give you an
idea of what is going to be available in
the future.
2009 will be a
landmark year in Kilchoman's history as
their spirit comes of age and the very
first single malt is released. A limited
run of 3 year old will be bottled for
general release from 9th September 2009.

Murray has rated some Kilchoman new
spirit in his 2008 Whisky Bible in which
he rated it 94 out of 100. Hopefully
this is a sign of things to come.
