Review of the Aultmore 2011 Cask No.900367 from the Whisky Illuminati Solaria Series.

Aultmore 2011 Whisky Illuminati Solaria SeriesThis Aultmore 2011 Single Cask No.900367 from independent bottler Whisky Illuminati's Solaria Series is the first of three releases from cask No.900367 with a further 2 releases from the same cask scheduled to be drawn and bottled over the next four years.

The new Solaria Series aims to give whisky enthusiasts the opportunity to explore how Scotch whisky evolves in the cask over time, thanks to its three-part bottling. Following this first edition (1:3) release in 2019, there will be a second release in 2021, with the final batch set for release in 2023.

Aultmore 2011 Single Cask No.900367 bottling 1 of 3 has been fully matured in a First Fill Spanish Oak Sherry Butt which offers whisky drinkers something quite different to the Aultmore original bottling core range which was only launched back in 2015 and is matured in re-fill hogsheads casks.

The Aultmore 2011 Solaria Series it is non chill-filtered, naturally coloured and has been bottled at a higher than normal cask strength than we would normally see from any bottler, 67.5% ABV.

This first batch of the Aultmore 2011 Solaria Series is a release of 120 bottles and is available from from specialist whisky shops such as Master of Malt

William Morrison's Tasting Notes:

Nose: Toffee infused with a little dusty tobacco, vanilla and honey, burnt raisins, a touch of Demerara sugar and a little candied orange sweetening things up, some coffee and spice, just the finest touch of Aultmore's signature grassy note lurking in the background.

Taste: Luscious dark sherried fruit leads with a delicious mix of burnt raisins and sultanas, it is joined by the touch of candied orange from the nose and closely followed by some lovely coffee, toffee, sugars and peppery spice.

Finish: Long and lingering finish, the sherry fruit bitters out leaving mildly drying oak infused coffee, some peppery spice and a little bitter dark chocolate.

Comment: At full strength this is a powerful beast but it is worth approaching the nose carefully to get its full undiluted pleasures and the same can be said for the palate although just a touch of water does tame the alcohol somewhat to enable you to fully appreciate what this flavoursome sherried beast has to offer. A deliciously powerful young big sherried Aultmore which I can only see getting more interesting come 2021 and 2023 when the 2nd and 3rd batches are bottled. The 120 price tag may stop some taking the plunge and grabbing a bottle but that is today's marketplace for such a limited release but if you enjoy this style of whisky this wont disappoint and there is more to come which should make it more interesting.
